Quinoa for Lunch ...
1/2 cup quinoa boiled in 3/4 to 1 cup water for 12-15 minutes
Add a blob of curry paste,
a handful of chopped raw almonds,
a handful of chopped pineapple and
a handful of coconut
Makes enough for two or put the other half in the fridge in a jar for tomorrow.
Add a fried or poached egg,
a handful of chopped spinach and
some chopped cilantro.
One of my household rainbows got a trim.
We kept the trimmings to use as clown barf.
